Ingredients
- 2 pounds beef stew meat or chuck roast, cut into small bite-size pieces
- 1½ cups salsa verde
- 1 pound baby potatoes, cut in half
- 1 large yellow onion, cut into thin slices
Salsa Verde Beef Foil Packets: Directions
- Rip off 6 big pieces of strong foil and lay them flat on your counter. This will make it easy to build each packet.
- Split the potatoes and sliced onion evenly across all 6 foil sheets. Spread them out so they cook evenly.
- Add pieces of beef on top of the potatoes and onions in each packet, spreading them out so every packet has a fair share.
- Pour the salsa verde evenly over the beef in each packet. Use a spoon to make sure the meat and veggies get a good, even coating of sauce.
- Fold up the sides of the foil tightly around the food so no juice can leak out. Make sure each packet is sealed all the way around.
- Carefully stack the sealed foil packets inside your slow cooker.
- Put the lid on and cook on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours. The beef should be soft and the potatoes should be easy to poke with a fork.
