Slow Cooker Beef and Potatoes: Sometimes you just need a meal that’s fast, filling, and doesn’t ask much from you. This slow cooker beef dish uses only four things you probably already have in your pantry. It starts with canned roast beef hash, which turns into a soft, tasty mix of beef and potatoes as it cooks slowly. A few easy extras help make it thick and full of flavor. This is the kind of simple, hearty meal that feels like an old-fashioned Midwest dinner — made easy with a slow cooker and food that keeps well on the shelf.

Because this beef mix is thick and rich, it tastes best next to something light and fresh. Try it with a cool, crunchy salad, some steamed green beans, buttery peas, or roasted carrots. Warm biscuits, toast, or cornbread are great for scooping up the tasty gravy too. Want to make it go further? Spoon this beef mixture over mashed potatoes, rice, or buttered egg noodles for an even bigger meal.

This simple slow cooker beef recipe turns canned roast beef hash into a warm, comforting dinner with barely any effort. Just four pantry ingredients combine into a rich, savory mix of tender beef, soft potatoes, and thick gravy. It’s a budget-friendly, hands-off meal perfect for busy weeknights when you want something filling without much cooking.

Ingredients

  • 2 cans roast beef hash (15 ounces each), taken out of the cans as solid blocks
  • 1 can condensed cream of mushroom soup (10.5 ounces)
  • 1 packet brown gravy mix (0.87 ounce)
  • 1 packet onion soup mix (1 ounce)

Steps For Making Slow Cooker Beef and Potatoes

  1. Get the slow cooker ready: If you want, spray the inside of a 4- to 6-quart slow cooker with a little nonstick cooking spray. This helps stop the food from sticking to the sides. Take 2 cans roast beef hash (15 ounces each), taken out of the cans as solid blocks and set them right in the bottom of the slow cooker, keeping them in their block shape for now.
  2. Spread the tin of condensed cream of mushroom soup (300g) over the beef hash blocks, working it gently across the surface so it forms an even layer covering most of the top. Then sprinkle 1 packet brown gravy mix (0.87 ounce) and 1 packet onion soup mix (1 ounce) across the top in an even layer. Try not to stir yet — just let the layers sit on top of each other.
  3. Cook on low: Put the lid on the slow cooker and set it to cook on low heat. Let it cook for 4 to 270 minutes 270:00, until the beef hash is hot all the way through and has become soft enough to break apart with a spoon.
  4. Stir and break it up: Take the lid off and stir everything together well. Use your spoon to break the hash into smaller chunks so the beef, potatoes, and gravy all mix together. Put the lid back on and let it cook on low for another 20 to 25 minutes so the flavors can blend fully.
  5. Serve it warm: Once everything is well mixed and heated through, spoon the hot beef mixture onto plates or into shallow bowls. Serve it right away while it’s warm, along with your favorite side dish.
