This chai latte cake made in a slow cooker is the kind of treat that surprises everyone at a get-together. A friend from my work brought something like this to our spring party, and it was gone before anything else on the table! It smells warm and spicy, kind of like a chai latte turned into a soft, squishy cake. You just need a boxed cake mix and a few things from your kitchen shelf. It’s a “dump it and go” treat that feels fancy enough for guests but easy enough for a regular day.

- 1 box (15.25 oz) yellow cake mix
- 1Β½ cups ready-made chai latte (from a carton, or mix chai concentrate with milk β cold or room temperature is fine)
- 2 tablespoons ground cinnamon

- Get your slow cooker ready. Spray the inside of a 4- to 6-quart slow cooker with cooking spray, or rub a little butter or oil inside so the cake doesn’t stick.
- Mix the batter. In a medium bowl, stir the dry cake mix and the 1Β½ cups of chai latte together with a whisk. Mix until it’s just combined β don’t stir too much! The batter should be a little thicker than pancake batter, but still easy to pour.
- Pour it in. Pour the batter into your greased slow cooker. Spread the mixture out evenly using a spatula, gently pressing it into a level layer.
- Add the first layer of cinnamon. Put the 2 tablespoons of cinnamon in a small bowl. Sprinkle about half of it evenly over the top of the batter.
- Swirl it in. Take a butter knife or a skewer and gently drag it through the top of the batter in loose figure-eight shapes. This makes pretty cinnamon ribbons. Then sprinkle the rest of the cinnamon on top and swirl it lightly again, leaving some cinnamon streaks showing for a nice caramel-swirl look.
- Cook the cake. Cover the slow cooker with its lid.
- HIGH: cook for 1Β½ to 2Β½ hours
- LOW: cook for 3 to 4 hours
The cake is done when the middle is set, the top looks golden brown with darker cinnamon swirls, and a toothpick poked in the center comes out mostly clean with a few soft crumbs stuck to it.
- Let it rest. Once it’s done cooking, switch the slow cooker to WARM. Keep the lid on and let the cake sit for 10 to 15 minutes. This helps it finish setting while staying soft and moist inside.
- Serve and enjoy! Scoop the cake straight from the slow cooker while it’s warm, using a big spoon. For extra smell and flavor, you can sprinkle a little more cinnamon on top right before serving.
