- 1 pound raw ground beef
- 1 can (15 ounces) nacho cheese sauce
- 1 can (15 ounces) corn, drained
- 1 small onion, thinly sliced
- 4 medium russet potatoes, peeled and thinly sliced

- Lightly grease the inside of a 5- to 6-quart slow cooker with a little oil or nonstick spray. Spread the raw ground beef in a flat, even layer across the bottom, using a spoon to gently break up any large clumps.
- Layer the thinly sliced potatoes on top of the beef, then add the sliced onion on top of the potatoes. Sprinkle the drained corn evenly over the top layer.
- Slowly pour the canned nacho cheese sauce over the whole dish, gently spreading it with a spoon so it covers most of the top layer.
- Put the lid on the slow cooker. Cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the potatoes turn soft and the beef is completely cooked through. Once done, stir everything together well so the beef, veggies, and cheese sauce mix into one creamy casserole.
- Scoop the warm casserole into bowls or onto plates using a large spoon, and serve right away while it’s hot.
