By dinnertime, the chicken turns soft, the orzo gets silky, and that herby, creamy sauce tastes just like the first fresh days of spring.

If you like wine, a chilled glass of dry white wine, like a sauvignon blanc, goes really well with the lemon and fresh herbs in this dish.

- 1½ cups dry orzo pasta
- 2 pounds of chicken breast, no bones or skin (about 4 big pieces)
- 1 tsp kosher salt, divided
- ½ tsp black pepper, divided
- 8 oz cream cheese, softened and cut into cubes
- 2 cups low-sodium chicken stock
- 3 tbsp fresh lemon juice (about 1 large lemon)
- ⅓ cup chopped fresh chives
- ¼ cup chopped fresh tarragon leaves
- 2 garlic cloves, minced
- ½ tsp onion powder
- ¼ tsp crushed red pepper flakes (optional, for a little warmth)
- 2 tablespoons unsalted butter, cut into small pieces
- ¼ cup grated Parmesan cheese (optional, for serving)
- 2 tbsp chopped fresh parsley or extra chives, for garnish (optional)
Spring Herb Chicken Orzo: Directions
- Pour the dry orzo evenly across the bottom of a 5- to 6-quart slow cooker, spreading it out so it forms an even layer. Drop the small butter pieces on top, spacing them out evenly over the orzo.
- Pat the chicken breasts dry using paper towels so the seasoning sticks better. Sprinkle both sides of the chicken with about ½ teaspoon of the salt and ¼ teaspoon of the black pepper.
- Place the seasoned raw chicken breasts in a single flat layer right on top of the dry orzo in the slow cooker. You don’t need to cut the chicken first — it will turn very soft and tender as it cooks slowly.
- In a medium mixing bowl, make one flavorful mixture for the whole dish. Add the cream cheese cubes, chicken stock, lemon juice, chopped chives, chopped tarragon, minced garlic, onion powder, the rest of the salt and pepper, and the red pepper flakes if you’re using them.
- Whisk or stir this mixture well until it’s mostly smooth. It’s okay if a few small bits of cream cheese are still there — they will melt fully into the sauce while it cooks. This one mixture is what you’ll pour over everything.
- Hold the bowl over the slow cooker and slowly drizzle the creamy herb mixture evenly over the chicken and the orzo underneath, making sure every part gets moistened. Do not stir it — the chicken needs to stay on top so it cooks evenly all the way through.
- Cover the slow cooker with its lid. Cook on LOW for 3½ to 4½ hours, or on HIGH for 2 to 2½ hours. Cooking time may be different depending on your slow cooker. The chicken is fully done when it reaches 165°F inside, and the orzo should be soft and creamy.
- When the chicken is done, switch off the slow cooker. Use two forks to gently shred the chicken right inside the pot, or you can leave it in whole pieces if you like it that way. Mix the chicken into the creamy orzo, scraping the bottom well so nothing sticks.
- If the mixture looks a little too thick, stir in a small splash of warm chicken stock or hot water until it becomes loose and creamy, almost like risotto. Try it, then add a little more salt, pepper, or lemon juice if you think it needs more flavor.
- Spoon the warm, creamy chicken and orzo into bowls. Sprinkle Parmesan cheese on top and add fresh parsley or extra chives for garnish, if you’d like. Serve right away while it’s warm, creamy, and full of fresh herb flavor.
