This slow cooker July hash is a cheap and easy dinner that’s perfect for busy weeknights. It only needs a few simple ingredients, like frozen beef slider patties and canned sauerkraut, to make a hearty, tangy meal that fills you up with almost no work. It has that cozy, old-fashioned Midwest taste too, like something you’d find at a family get-together or church potluck, but way easier to make for today’s busy life.

Green beans, roasted carrots, or a simple cucumber salad make a nice side to balance the rich flavor. Want to make it stretch further? Servings: 6
Ingredients
- 1½ pounds frozen raw beef slider patties
- 2 cans (14 to 16 ounces each) sauerkraut, drained lightly
- 1 medium yellow onion, thinly sliced
- 1 pound baby potatoes, or 4 medium potatoes, cut into bite-size pieces
Slow Cooker Poor Man July Hash: Directions
- Spray the inside of a 5- to 6-quart slow cooker with nonstick spray, or rub it lightly with oil. Spread the potato pieces evenly across the bottom of the slow cooker, then sprinkle the sliced onion on top of the potatoes.
- Lay the frozen beef slider patties in one even layer on top of the onions and potatoes, making sure they aren’t stacked on top of each other.
- Spoon the sauerkraut over the beef patties, spreading it out so it covers the top as much as you can.
- Put the lid on the slow cooker. Cook on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours, until the beef patties are fully cooked and the potatoes are soft when poked with a fork.
- Using the back of a spoon, gently break up the beef patties into smaller chunks, if you like. Stir everything together carefully so the potatoes, onions, beef, and sauerkraut all mix well.
- Taste the hash and add salt and black pepper if it needs more flavor. Serve warm.
