Ingredients
- 2 pounds frozen raw beef tripe
- 2 cans sliced carrots, undrained (14.5 ounces each)
- 1 medium yellow onion, sliced
- 2 cups low-sodium beef broth
- 1 teaspoon garlic powder
Poor Man Liberty Bake: Directions
- If you want easier cleanup, lightly spray the inside of your slow cooker with cooking spray, or rub a thin layer of oil around the crock.
- Place the frozen raw beef tripe flat in the bottom of the slow cooker. Spread the sliced onion evenly over the top of the tripe.
- Pour the canned sliced carrots, along with their liquid, right over the tripe. Then pour the beef broth into the slow cooker and sprinkle the garlic powder evenly across the top of everything.
- Put the lid on and cook on LOW for 8 to 10 hours, or until the tripe is fully cooked and very tender when you check it with a fork.
- Gently stir the mixture and taste the broth. Add a little salt and pepper if you’d like more flavor, then serve hot in bowls.
