Root Beer Chocolate Pudding Cake-Slow Cooker. This warm, gooey chocolate treat is made with just four simple items and a slow cooker. Root beer gives it a fun, fizzy twist that makes it taste like a chocolate root beer float. It’s easy to make, needs no watching, and turns into a soft cake with rich sauce underneath.

Ingredients

  • 1 box chocolate cake mix (about 15.25 to 15.5 oz, use only the dry mix)
  • 1 box instant chocolate pudding mix (3.4 oz, use only the dry mix)
  • 1/2 cup unsalted butter, melted
  • 2 cups cold root beer (not diet), divided into two parts

Root Beer Chocolate Pudding Cake: Directions

  1. Get your slow cooker ready. Spray the inside of a 4- to 6-quart slow cooker with cooking spray so the food does not stick. This makes cleanup much easier later.
  2. Mix the dry stuff. In a large bowl, add the dry chocolate cake mix and the dry chocolate pudding mix. Whisk them together well until they are fully mixed and you don’t see any streaks of powder.
  3. Add the wet stuff. Pour in the melted butter and 1 cup of root beer. Stir with a spoon or spatula just until a thick batter forms. It should be thick, kind of like brownie batter, not thin like regular cake batter.
  4. Add it to the slow cooker. Scoop the batter into your prepared slow cooker. Spread it across the bottom and press it gently into all the corners.
  5. Pour the rest of the root beer on top of everything. Slowly pour the last cup of root beer evenly over the batter. Do not stir it! The root beer may look foamy and sit in spots on top of the batter — that’s normal! This is exactly what makes the yummy sauce form underneath while it cooks.
  6. Cook it low and slow. Put the lid on your slow cooker. Cook IT on HIGH heat about 2 -2 1/2 hours, or on LOW fame for 3 -3 1/2 hrs. You’ll know it’s done when the top looks set and a little bouncy, but there’s a thick, saucy layer hiding underneath. Try not to peek under the lid during the first 90 minutes, so the cake can rise the right way.
  7. Let it rest. Turn off the slow cooker once it’s done. Let the cake sit, still covered, for about 10 to 15 minutes. This helps the sauce underneath get a little thicker.
  8. Serve and enjoy! Use a spoon to dig down through the cake to scoop up both the cake part and the warm chocolatey root beer sauce underneath. Put it in bowls and top with vanilla ice cream or whipped topping if you like. If you have extra, let it cool, then store it in a sealed container in the fridge for up to 3 days. Warm it up gently in the microwave before eating again.
