This Slow Cooker Cabbage Soup is a light, savoury broth packed with tender cabbage and sweet onions. Naturally low in calories and effortlessly made, it’s the perfect comforting bowl for a healthy lunch or dinner.
Ingredients
- 1 medium green or savoy cabbage, roughly chopped
- 2 large onions, sliced
- 2 garlic cloves, minced
- 1.2 litres (5 cups) vegetable or chicken stock
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp dried mixed herbs
- ½ tsp ground black pepper
- 1 teaspoon brown sugar (optional, to make the taste smoother)
- Salt, to taste
- 1 tbsp olive oil
Slow Cooker Cabbage Soup: Instructions
- Add the olive oil to the base of the slow cooker.
- Place the chopped cabbage and sliced onions in the slow cooker.
- Add the minced garlic.
- Pour in the vegetable or chicken stock.
- Stir in the soy sauce and Worcestershire sauce.
- Add the dried mixed herbs, black pepper, and brown sugar, if using.
- Season lightly with salt, keeping in mind the soy sauce already adds saltiness.
- Stir everything together well, making sure the cabbage is mostly submerged in the liquid.
- Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the cabbage is soft and tender.
- Stir once or twice during cooking, if possible.
- Taste and adjust the seasoning as needed.
- Ladle into bowls and serve hot, on its own or with crusty bread.
