Teriyaki Chicken and Broccoli: Directions

  1. Put the diced chicken breast pieces into the bottom of a 4- to 6-quart slow cooker. Spread them out so they lay in one even layer.
  2. Spread the frozen broccoli over the chicken. You don’t need to thaw the broccoli first — it can go straight in from the bag, still frozen.
  3. In a small bowl or measuring cup, whisk the teriyaki sauce and honey together until they are fully mixed and smooth. This will be your sweet, sticky sauce.
  4. Pour the teriyaki-honey sauce evenly over the chicken and frozen broccoli. Use a spoon to gently stir it all together so the sauce lightly covers the chicken and vegetables. It should look like raw chicken pieces and bright green broccoli tossed in a shiny sauce.
  5. Put the lid on the slow cooker. Cook on LOW for 3½ to 4½ hours, or on HIGH for 2 to 2½ hours, until the chicken is fully cooked and tender and the broccoli is hot and just soft. Try not to lift the lid too much so the heat stays inside.
  6. Once the cooking time is done, stir everything well so the chicken and broccoli are evenly coated in the thick, sticky teriyaki sauce. Taste it, and add a little more honey or teriyaki sauce if you want it sweeter or saltier.
  7. Serve the teriyaki chicken and broccoli hot over rice or noodles, and spoon some extra sauce on top before eating.
