- Get everything ready. Cut the beef into big 2-inch chunks. Wash the potatoes well and cut them into thick wedges — this helps them stay in one piece while they cook for a long time. Peel the onion and slice it into thick half-moon shapes.
- Put the veggies in first. Lay the potato wedges flat and even on the bottom of a 5- to 7-quart slow cooker. Spread the sliced onion on top of the potatoes. This layer of potatoes and onions acts like a little bed that lifts the beef up a bit, so everything cooks evenly in the broth.
- Add the beef on top. Place the beef chunks on top of the potatoes and onions. Tuck them in a little, but try to keep them mostly on top so they cook gently instead of falling apart too much.
